Unlike most “distilleries” we make all our base spirits here on site. Our Gins and Vodkas are made from spirit distilled from fermented whey. We are one of only 2 whey spirit producers in Australia. Our whey is sourced from small local cheese makers here in the Yarra Valley. Whilst being more difficult, and far more time consuming, the spirit produced through this method is world renowned for its incredible smoothness and rounded mouth feel. Even straight from the still at 90 plus percent, it tastes very pleasant!
All our botanicals are sourced locally, where possible, and the Sloe Berries used for our Sloe Gin are hand-picked by ourselves from 200-year-old hedges at a secret location in Northern Tasmania.

Our spirits and cocktails can be enjoyed in the gin room, outside dining or the cellar door. Also available for takeaway purchase or online.
